27 ALTITUDE the beauty of the High Plateau resort. After numerous professional stays abroad in starred establishments, Mauro decided to return to his first love and to come back to Crans-Montana, both to offer a fulfilling environment to his children and to enjoy a new start. He wanted to get back to the basics, namely to make the most of simple, local products by offering authentic cuisine that brings tradition back to the plate. He was joined by a friend from his youth, Massimiliano Masciaga, a Piedmontese chef who had followed a similar path to him and who shared his values. Together, they develop the recipes and decide which products they want to highlight in their seasonal menu. WHAT’S COOKING? Thanks to a traditional know-how, all the products are entirely «home-made» and rigorously selected. Thus the pasta is made by hand, with a rigorous choice of flours, with or without eggs, to satisfy the demands of customers with allergies. Even the truffles come from the Valais and are offered à la carte during the season. The simplest products are dressed in their most beautiful finery, suc h as this Piedmontese Méli-Mélo composed of a game terrine with Mamma’s pomegranate sauce, within a tasting plate that delights our taste buds. Mission successful: refinement, taste sublimated by a unique know-how; even the home-made corn bread is extraordinary!
