26 The Café du Centre is part of the history of Crans-Montana. A traditional and unmissable address, the establishment attracted Mauro Parachini, a Piedmontese chef, to take over from the Gsponer family. To mark this new beginning, the restaurant and terrace have been gently renovated to retain the authenticity of the place with a twist. Mauro Parachini’s concern is to bring tradition back to the plate and to highlight local and seasonal products. His cuisine is an invitation to travel between the Valais and Piedmont. THE SHORT HISTORY OF MAURO PARACHINI Born in 1970 in a village in Piedmont next to Lake Maggiore, young Mauro was attracted to the culinary world from an early age. As the son of a butcher, in a family attached to traditions, his parents instilled in him very early the values of family and of work well done. At the age of 6, he made his very first risotto alone in the family kitchen! It was only natural that he decided to study at the hotel school in Stresa to acquire the necessary knowledge to make his passion for cooking even greater. During his studies, he took advantage of a practical training period at the Royal Hotel in Crans-Montana and this experience left him with magnificent memories, both from the point of view of the atmosphere that reigns there and IN THE CENTRE - BETWEEN VALAIS AND PIEMONT gastronomy
