90 local life Behind this elegant and warm oenotheque, opened in July 2025, is Dylan Osterino, a young and passionate entrepreneur, a sommelier at heart, and an ambassador for an art of living built on sharing, quality, and discovery. “I’ve always lived in the world of wine, from hotel school to my experiences abroad, but I had never had a place of my own here, in my home resort,” he says. Dylan searched for the ideal space for a long time before transforming his digital project (which included a blog and a distribution activity) into a physical venue. With Di-Vino, he has finally brought his passion to life by creating a meeting place for seasoned wine lovers as well as curious newcomers. WARM DISCOVERIES Di-Vino is not just a wine bar. It is a space that connects the winemaker, the product, and the customer. Prestige is not the topic—conviviality is. For Dylan, wine is above all about sharing. He likes to say that when you open a bottle, you rarely do it alone. His mission is to transmit that emotion and this culture of connection. Toachieve this, he travels throughEuropebybicycle for two months each year to meet winegrowers and explore terroirs. “Those I love, I invite here. We share their story, their philosophy, and their grape varieties,” he says. The result is a vibrant, evolving wine list built on passion and affinities, where every wine has its purpose. A SENSORY JOURNEY The Di-Vino selection is as demanding as it is diverse. It includes about 50% Swiss wines, with a significant focus on Valais. These are complemented by carefully chosen Italian and French wines. Dylan favors indigenous grape varieties—those that tell the story of a place. “When I go to Burgundy, I want to taste Chardonnay and Pinot Noir. In Valais, I focus on Petite Arvine or Cornalin,” he explains. The choice of wineries depends as much on wine quality as on human connection. Di-Vino collaborates with passionate artisans and producers. This aspect is essential : humans working with and for other humans.
